Smoke Daddy’s Review of Squares Bar-B-Que Express

My favorites were the brisket and jalapeno-cheese cornbread.  And the rib wasn’t far behind!

MAIN FARE:Squares Spread

  • Brisket – Mesquite. Smoky, with good texture.  Very light rub.  Lean cut.  Very good.  Fatty is also very good.
  • Rib – Short with flat rib bones… baby/loin backs.  Wet.  Well done… fat has rendered, and its been steam-panned.  Bark is soft.  Greasy but good.
  • Sausage – Hillshire Farms.  Casing is tough/chewy.

OTHER FARE:

  • Potato Salad – Standard with firm taters.
  • Slaw – Leaf has lost a bit of its crunch.
  • Sauce – Brown with worcestershire + sweetness.  Works with everything.  Nicely done.
  • Jalapeno/Cheese Cornbread – Moist & mild.  Very good.

ATMOSPHERE:

  • Barn-like structure with Drive-through and large parking lot
  • Sonny Byran-style old school benches on the front porchSquares Pit Boss
  • Cafeteria-style serving; sides come with the meat and are all you can eat
  • Decor is cowboy comfortable with plenty of rodeo pictures on the walls
  • Using a J&R Oyler pit with green mesquite
