ssweeney’s Review of Cotton Belt BBQ Co
- Brisket: Firm & moist. Mild smoke. Not much flavor in the bark… trimmed? Nice meat flavor; light on the smoke.
- Plus: We’ve arranged a viewing of the film ‘Texas Barbecue: A Love Story’ with Cotton Belt.

- Sides: PS – Mustard-based, creamy; Slaw – OK; Beans – Fairly standard pinto variety
- Hot Link: Good meat flavor with some smoke for balance. Spice slowly builds…nice!
- Sausage: Jalapeno-Cheese sausage: Kind of like getting nachos at the ballpark… probably shouldn’t have, but couldn’t resist. This is a nice combination! Very good.
- Sausage: Commercial? I’ve definitely had this somewhere before… OK.
- Spare Rib: Falling off the bone. Moist & Good. Nice bark, but not much spice/flavor.
- Atmosphere: Near RR tracks and Main St; Nice patio with live music; They have tables reserved for the BBQ Tours Crew… you gotta like that! Fairly new place, but is working to become part of the fabric of the community. These guys understand the BBQ biz, and are turning out decent ‘Q from their Southern Pride cookers. Not bad for city folk!
